As much as I love Stone & Wood, I can’t stand IPA. Never liked the taste. Saying that, Stone & Wood Pacific ale is one of my favourite beers. Always been a big fan!

For some reason I always think of the band “ Midnight Oil “ when I see Rasta surf or speak. In my opinion they are a perfect combo 🤙🏼🔱
Do you produce ale with single temperature infusion, the step mash method or with the Hochkurz method? You are brewing a variation of English Porter in what way? Unless you were trained by an English brew master how would you know the way an English brew master makes/made porter or how would you know about the ingredients they use? Brew masters tell no one nothing about how they make ale and lager, or they would lose their job. Do you have a date when ancient people made porter? You said that ancient porter was made before utilities were available, was it 500 years, a thousand years before utilities? Weihenstephan has been around for about a thousand years did they use an ancient brewing method and rocks when they started out? Will you list the books that led you to believe that porter was made by ancient people? Using regenerated malt is great as long as the malt is capable of making ale. If the malt is high modified, to over modified and high in protein, the malt is whiskey malt, which is used with the single temperature infusion method. The malt needs to contain only enough Alpha to liquefy amylose and release simple sugar, glucose. To make some kind of ancient stuff and duplicate the crappy malt that ancients used, and maybe that is the type of malt that you purchased to make the ancient beer with, the KI (modification) listed on a malt spec sheet should have the widest span as possible, KI 34 to 52, would be great malt for making ancient stuff because brewers in ancient times had no idea about malt modification and whatever malt they made or purchased, modification would have been anywhere from high quality, under modified, malt, to low quality, over modified, malt. If there are stories about how to make ancient beer, there probably are malthouses that produce malt to fit the story but to provide a brewer with E Caveat Emptor there will be a malt spec sheet with the malt.
